Shaved Fennel & Citrus Salad with Cara Cara Orange Vinaigrette
This Shaved Fennel & Citrus Salad with Cara Cara Orange Vinaigrette is the perfect spring & summer salad! Crunchy, fragrant, and zesty, it screams summer and totally looks the part with bright orange and green.
I harvested this ginormous fennel bulb (a proud gardener moment!) and was determined to create a recipe that put the fennel front and center. This salad is just that! Also, trying to keep it seasonal, I added the cara cara oranges as their season is at its very tail end. The citrus has been out of this world this season, so I had to incorporate it while it lasts!
Of course, the star of the show is the fennel, so I’ve used both the bulb and fronds in the salad to get the most flavor possible. The cara cara orange makes a slightly sweet vinaigrette, perfectly complementing the fennel, and the parmesan and pistachios add the perfect nuttiness.
This is a total crowd-pleaser salad, perfect for spring and summer!
Shaved Fennel & Citrus Salad with Cara Cara Orange Vinaigrette
Ingredients
Cara Cara Orange Vinaigrette
1/8 cup lemon olive oil
1/8 cup avocado oil
Juice & zest of 1 Meyer lemon
1/2 tsp dijon mustard
Juice of 1/2 cara cara orange (or other citrus if you can't find cara cara oranges)
Salt, to taste
Fennel & Citrus Salad
Large bunch of mixed greens (I used red lettuce, butter lettuce, iceberg lettuce, and arugula)
Fennel bulb, finely shaved or chopped
Large handful of pistachios, roughly chopped
Shaved parmesan
Grilled cara cara orange (or other citrus if you can't find cara cara oranges)
Fennel fronds, for garnish
Instructions
To make the dressing, whisk all ingredients together and set aside.
Chop greens to the desired size. I kept them fairly large for this salad, as it gives them a nice crunchy texture!
Shave the fennel bulb. You can do this by thinly slicing or using a mandolin. Add to the mixed greens.
Grill the cara cara oranges until they get a nice little char.
Add grilled oranges, chopped pistachios, shaved Parmesan, and fennel fronds to the salad.
Finish off with your Cara Cara Orange Vinaigrette, and enjoy!
