Za'atar Kale Salad
Back with another garden recipe for ya! This za'atar kale salad is a little spicy, a lot zesty, and uber-tasty.
It’s such a great way to add tons of vitamins & minerals to your meal with the nutrition-packed kale, some healthy fats with the avocado, and a little protein with the nuts & seeds. This kale salad is loaded with flavor and crunch, perfect for spring.
Za'atar Kale Salad
Ingredients
A big bunch (or two) of kale
1 Honeycrisp apple, cut into matchsticks
~ 1/4 cup pistachios
~ 1/4 cup sunflower seeds
1 avocado, sliced
1 heaping tbsp Za’atar
Pink sea salt, to taste
Instructions
Harvest a big bunch of fresh kale from the garden (or from your local farmers market)! Rinse kale well and dry.
Add kale to a food processor with a chopping blade. Pulse until kale is finely chopped and no large pieces remain. This method gives the kale a uniquely fluffy texture with a soft crunch, plus you can skip the massaging step since the processor does it for you!
Top with apple (I love mine cut into thin matchsticks for the ultimate crunch), pistachios, sunflower seeds, and sliced avocado.
Season with Za’atar and salt. Do not skip the Za’atar ~ this is what makes the salad really pop!!
Finish off with the Lemon Tahini Vinaigrette. Make sure to add lots of red pepper to the dressing to give it that kick of spice.
